Cajun Scallops with Lemon Herb Sauce

Cajun Scallops
1 cup cornmeal
2/3 cup Signature® Cajun Seasoning
1 lb, 8 oz sea scallops
2 Tbsp cooking oil

Lemon Herb Sauce
1 cup plain yogurt
1 cup sour cream
1 Tbsp Durkee® Salt-Free All-Purpose Herb Seasoning
2 Tbsp lemon juice
1/2 tsp Signature® granulated garlic
8 oz cucumber, cut into 2-inch sticks

Method

Cajun Scallops
Combine cornmeal and Signature® Cajun seasoning. Dredge scallops in cornmeal.

Heat oil in saute pan. Add scallops and cook 5 minutes, until browned and cooked through.

Lemon Herb Sauce
Combine yogurt, sour cream, Durkee® salt-free all-purpose herb seasoning, lemon juice and Signature® granulated garlic. Serve scallops with Lemon Herb sauce and cucumber sticks.
