'The Timbers' is in their 8th winter of operation. Owned by brothers Monte and Quinn Johnsen from Jackson Hole, WY, this fine dining experience can perhaps best be described as 'rustic elegance'. Attached, is a deli with a separate kitchen where lighter fare is served. Also part of the mix, is 'The Timbers Bar' where over 40 microbrew varietals can be found, plus an award-winning wine list!
Scott Mechura, executive Chef of this seasonal not-to-miss establishment, has an extensive big-city Minneapolis background, with small-town values. When asked the secret of his delicious fare, he says 'Buy the best ingredients and try not to screw it up!' With tales of personal dining encounters and restaurant reviews both factored in? Clearly he is succeeding! Balancing his own experiences and palate, a small but most interesting menu has evolved. The risotto, dry-aged ribeye, and ahi tuna, all help create a most excellent harmony of selection. If 'The Timbers' is famous for anything, surely it is none other than the Elk chop with sweet potato gratin (pictured). A fan of the use of color, Scott refers to his something for everyone menu as 'Traditional French, with Asian influence'. One can see several American classics as well... In keeping with Montana's abundant natural ingredients, beef, game, produce and even goat cheese are purchased locally as much as possible.
