Alaska Canned Salmon Shepherd's Pie

Ingredients
63 oz Alaska canned salmon
3 qts mixed vegetables, frozen
1-1/2 cups chicken broth, low salt
3 Tbsp cornstarch
1 Tbsp lemon juice
1 Tbsp dill weed, dried
1/3 cup Grey Poupon Dijon Mustard
6 Tbsp butter, cut into small pieces
3 qts mashed potatoes, prepared
Black pepper and paprika, to taste

Method
Drain and flake canned salmon.** Gently combine with mixed vegetables.
 
Whisk together chicken broth, cornstarch, lemon juice, dill weed and mustard. Combine with salmon mixture. Spoon evenly into a lightly greased hotel pan. Dot with butter. Spread with mashed potatoes to cover evenly. Sprinkle with pepper and paprika.
 
Bake at 400 degrees F for 30-40 minutes, or until internal temperature of 145 degrees F. Keep warm in steam table until ready to serve.
 
To serve: Cut shepherd's pie into 24 pieces. Spoon each piece onto a serving plate.
 
** The skin and tiny, soft bones are completely edible and are a source for calcium and omega-3 fatty acids. Simply blend skin and bones with salmon and other ingredients.
