Alaska Canned Salmon Tacos

Alaska Canned Salmon Tacos

Ingredients
64 oz Alaska canned salmon
1 qt salsa
48 taco shells
4-1/2 cups Ortega refried beans
1 qt cheddar cheese, grated
9 cups lettuce, shredded
3 cups tomatoes, chopped
Additional salsa as needed

Method
Drain and flake canned salmon. Mix in salsa; set aside. Arrange taco shells in hotel pan. Fill tacos with beans and cheese, dividing evenly among all taco shells.
 
Bake at 350 degrees F for 6-8 minutes, or until cheese is melted. Fill each taco with canned salmon mixture and remaining ingredients, dividing evenly among all taco shells. Keep warm in steam table until ready to serve.
 
For each serving: Arrange 2 tacos on a serving plate. Serve with additional salsa.
