Alaska King Crab in Black Bean Sauce

Ingredients
3 Tbsp cornstarch
3/4 cup vegetable oil
18 oz green onions cut into 3-inch long pieces
12 cloves garlic, crushed
1-1/2 cups black soy beans, fermented
3/4 cup ginger, fresh, minced
4-1/2 lbs Alaska King Crab split legs, thawed, if necessary and cut into 3-inch long pieces 
2-1/4 cups chicken stock (unsalted)
1/4 cup Chinese rice wine
1/4 cup soy sauce

Method
For 4 appetizer servings (or 2 main course servings): Dissolve 1-1/2 tsp cornstarch in 1 Tbsp cold water. Set aside.
 
Heat 2 Tbsp oil in a wok over high heat. Stir-fry 3 oz green onions and 2 cloves crushed garlic for a few seconds. Add 2 oz (1/4 cup) black beans and cook for a few seconds. Add 2 oz (1/4 cup) black beans and cook for a few more seconds. Stir in 2 Tbsp ginger and 12 oz crab pieces and stir-fry for one minute. Stir in 3 oz chicken stock, 2 tsp wine and 2 tsp soy sauce. Cover and cook for two minutes over moderate heat. Add cornstarch mixture and stir until sauce has thickened. Remove garlic cloves.
 
Arrange on a serving plate and serve.
