Alaska King Crab with Bearnaise Dip

Alaska King Crab with Bearnaise Dip
Liven up dinner specials with this savory, colorful, delicious entree.

Ingredients
48 split Alaska King Crab split legs (18 lbs),  thawed
2 cups water
1 cup dry white wine
2 slices lemon
2 sprigs tarragon, fresh
1 sprig thyme, fresh

Method
Bring water, wine, lemon, tarragon and thyme to boil in large saute pan. Add crab, return to boil, reduce heat and steam, covered, about 5 minutes or until crab is thoroughly heated.
 
Make the Bearnaise Dip.
 
To serve; arrange 2 split legs and 1-1/2 oz Bearnaise Dip on serving platter; garnish with lemon and herb sprig.
