Alaska Snow Crab Blanco Pizzette

Serves: 50 (6 to 8-inch) pizzas

Ingredients

2 cups garlic, crushed
6-1/4 cups olive oil
50 (6 to 8-inch) prepared pizza shells
2-1/4 cups fresh lemon juice
18 lbs, 12 oz Alaska Snow Crab, meat, flaked or chunked
12-1/2 cups sliced green onions
9 lbs, 6 oz Roma tomatoes, thinly sliced
9 lbs, 6 oz shredded pizza cheese blend (such as Mozzarella, Parmesan, Romano, Reggiano, etc.)
3-1/4 cups chopped fresh basil or thyme

Method

Blend garlic and olive oil. For each serving, brush 2 tablespoons oil on a pizza crust. Bake pizza at 425 degrees F for 5 minutes; remove from oven.

For each crust, sprinkle approximately 2 teaspoons lemon juice over 6 ounces crab; toss to blend. Spread crab over crust.

Sprinkle on 1/4 cup (1/2 ounce) sliced green onions, 3 ounces thin sliced (about 10 to 12) Roma tomato slices, 3/4 cup (3 ounces) shredded cheeses, and 1 tablespoon chopped fresh herbs.

Bake additional 10 minutes or until cheese is melted and thoroughly heated through.
