Anchovy Dressing

Anchovy Dressing

Serves: 24

Ingredients
1 cup olive oil
2/3 cup red wine vinegar
1 cup chives, fresh, chopped
1 cup olives, Kalamata or Provencal, pitted
1/2 cup Anchovy filets
Salt and ground black pepper, to taste

Method
In bowl or food processor, process oil and vinegar. Add chives, olives and anchovy and continue to process just until it becomes slightly emulsified. Season with salt and pepper. Cover and hold until ready to serve.
 
Serve with Catfish Nicoise.
