Method
In saucepan, combine California raisins, apricots, sugar and warm water. Bring to boil, stirring to dissolve sugar. Remove from heat. Cover; let stand 15 minutes. Meanwhile, soften gelatin in cold water; set aside. Pour fruit mixture into food processor; process just enough to finely chop (do not puree). Stir in softened gelatin, mixing to dissolve. Stir in walnuts. Spread evenly in oiled 8-inch square baking pan. Chill. Cut into 1-inch squares. Roll squares in coconut or dip in melted chocolate, if desired.
