Artichoke Roundabouts

Artichoke Roundabouts

Ingredients

1 lb Lamb's Supreme Roundabouts 
1-1/2 lb cream cheese, softened
8 oz Cheddar cheese
8 oz artichoke hearts in water, drained, diced
10 oz red, green and yellow bell peppers, diced
8 oz canned green chilies, drained, diced
3 oz roasted garlic, pureed
60 tart shells, 2" baked
6 cups Red Pepper Coulis
60 star fruit slices, 1/4" thick
Thyme springs, for garnish

Method
Bake Roundabouts at 400 degrees F (convection oven) for 18 minutes or at 425 degrees F (conventional oven) for 22 to 25 minutes, or until golden brown. Cool and cut each in quarters.
 
Blend together cream cheese, cheddar cheese, artichokes, peppers, chilies and garlic. Stir in Roundabouts. Fill each tart shell with 3/4 oz of filling , using a #40 scoop. Bake at 350 degrees F for 5 minutes.
 
To assemble appetizer, ladle 2 oz Red Pepper Coulis in center of each plate. With a toothpick pull sauce outward to form a star. Place 3 tart shells on sauce at 10:00, 2:00 and 6:00. Garnish each with a sprig of thyme. Place a slice of star fruit at each open spot on plate (7:00, 11:00 and 3:00). Serve immediately.
