Artichoke and Olive Salad

Ingredients
2 cups artichoke hearts, marinated, drained, quartered
2 cups black olives, whole, pitted
1 cup red bell peppers, cut into strips
1 Tbsp parsley, minced
2 Tbsp Italian vinegar and oil dressing, commercial

Method
Combine all ingredients in large bowl.  Toss gently. Cover and chill.
 
To serve, portion 1/2 cup on green lettuce leaf.
