Asian Bow-Tie Pasta Salad with Shrimp & Vegetables

Ingredients

16 oz Luzzatti Farfalle
1/2 cup peanut oil
1/3 cup soy sauce
1/3 cup rice vinegar
1 Tbsp sugar
1 Tbsp oriental sesame oil
1/8 tsp crushed red pepper flakes
Salt and pepper, to taste
12 oz cooked medium shrimp, cleaned and deveined
1 each red and yellow bell peppers, cut into 1/2-inch pieces
2 large broccoli stalks, florets reserved
8 green onions, chopped

Method
Prepare farfalle according to package directions. During last 2 minutes add broccoli florets; rinse in cold water and drain well.

Whisk peanut oil, soy sauce, vinegar, sugar, sesame oil and pepper flakes. Season to taste with salt and pepper. Transfer half of the dressing into a large bowl. Mix in shrimp and bell peppers; marinate for 15 minutes.

Add pasta, broccoli and green onion to shrimp mixture. Toss with additional dressing to coat well. Serve at room temperature or cover and chill up to 6 hours.
