Asian Catfish with Vegetable Stir-Fry

Ingredients
24 unbreaded U.S. farm-raised catfish fillets
6 eggs, large
1 qt coconut, sweetened, flaked
1 cup peanuts, unsalted, chopped
1 cup sesame seeds
Peanut oil, as needed

Method
In a shallow pan beat eggs.  In another shallow pan combine coconut, peanuts, and sesame seeds.  Dip catfish fillets in egg mixture then coat with seed mixture.  Place on sheet pan, cover and refrigerate 10-15 minutes until ready to use.  They may be refrigerated up to several hours before cooking.
 
To Serve:  Heat oil on flattop.  Pan griddle catfish fillets, 3-4 minutes per side.  Remove from griddle, place on sheet pan and continue cooking in 350 degree F oven for 3-4 minutes or until completely golden and cooked through.  Serve each fillet over 1 cup Vegetable Stir Fry.
