Aunt Mary's Inside-Out Ravioli

Ingredients

1 lb lean ground beef
1 pkg frozen spinach, thawed
2 cloves of garlic, chopped
1/2 onion, chopped
1 tsp salt
1/8 tsp nutmeg
1/8 tsp pepper
1 (12 oz) bag Dakota Growers Pasta wide egg noodles, cooked and drained
1 Tbsp olive oil
1/2 cup dried bread crumbs
1 (26 oz) jar spaghetti sauce
1 (8 oz) can tomato sauce
2 eggs, beaten
1 (8 oz) bag shredded cheddar cheese
1 (8 oz) bag shredded mozzarella cheese

Method

Saute onions and garlic in olive oil. Add ground beef and cook until beef is browned; drain. Mix with fork until well crumbled. Season with salt, pepper and nutmeg.

Stir in spaghetti sauce and tomato sauce. Simmer 10 minutes. Squeeze water out of the spinach and chop. Add bread crumbs, cheddar cheese and eggs. Add cooked noodles and mix well.

In a greased 9 x 13-inch pan, add half of the pasta mixture. Top with half of the meat mixture. Repeat with another layer of pasta mixture and meat mixture. Cover pan with aluminum foil and bake in a preheated 350 degree oven for 40 minutes. Uncover and spread mozzarella cheese over the top. Return to the oven for an additional 10 minutes.
