Avocado-Tomatillo Sauce

Avocado Tomatillo Sauce

Ingredients
1 lb tomatillos
11 oz avocados, peeled and pitted
1 Tbsp lemon juice
1 jalapeno pepper, seeded and minced
2 tsp garlic, minced
1/2 tsp cumin, ground
1/2 tsp salt
1/4 tsp black pepper
1/2 cup green onions, sliced
1 Tbsp cilantro

Method
Place tomatillos in a small saucepan. Cover with water and bring to a boil. Simmer until translucent and soft, about 5 minutes. Drain and cool. Purée tomatillos in food processor until smooth, then stir in green onions and cilantro.
