Bacon, Beef & Eggs for Brunch

Ingredients
6 slices bacon, diced
1/2 lb chipped beef, shredded
4 Tbsp butter
1-1/2 cups mushrooms, sliced
1/2 cup flour
4 cups milk
Pepper, to taste
3 cups easy eggs
1-1/2 tsp salt
1 cup milk, evaporated
4 Tbsp butter, melted

Method
Sauce: (First 7 ingredients) Fry bacon until crisp. Remove from heat and add the chipped beef, butter and mushrooms and mix well. Sprinkle the flour over bacon and mushroom mixture. Gradually stir in milk and cook, stirring until mixture thickens. Season with pepper and set aside.
 
Combine eggs, salt, milk, and melted butter and scramble in a large skillet. Keep eggs moist. In a baking dish, alternate layer of eggs and sauce. Heat in a 275 degree F oven for 45 minutes.
