Baked Salmon Fillet with Pecan & Mustard Crust

Ingredients

1/4 cup Sweet N Hot Stone Ground Mustard
3 Tbsp melted butter
1/2 cup fresh bread crumbs
1/2 cup chopped pecans
3 tsp chopped fresh parsley
1-1/2 to 2 lb salmon fillet
1 lemon cut in wedges for garnish

Method

Mix together mustard and butter in a small bowl and set aside.

Season salmon fillet with salt and pepper. Place skin side down on lightly greased baking sheet. Brush with mustard-butter mixture. Coat the fillet with bread crumb mixture.

Bake in a 400 degree F oven for about 25 to 30 minutes depending on the thickness of the fillet. It should reach an internal temperature of 165 degrees F and flake easily with a fork.
