Bayou Roasted Chicken

Bayou Roasted Chicken
A piquant combination of moist, roasted chicken breast, sautéed green bell pepper, celery, and onion, topped with a spicy red sauce.

Ingredients
10 Tyson 9 piece cut Marinated IQF Chicken
2 Tbsp vegetable oil, hot
1/2 cup onions, minced
1/2 cup green bell peppers, minced
1/2 cup celery, minced
6 cups marinara sauce, commercial

Method
Place thawed chicken into roasting pan.  Combine next 4 ingredients and sauté in skillet over medium heat for 9 to 10 minutes, or until vegetables become tender but not brown. Remove from heat. Add marinara sauce to vegetables. Stir well. Pour over chicken.
 
Roast in preheated conventional oven at 375 degrees F for 85 to 90 minutes, or until juices run clear when chicken is pricked. Remove from oven. Keep warm. Serve 1 breast half with 1/4 cup pan sauce. Accompany with green beans.
