Bean and Lentil Chili

Bean & Lentil Chili

Serves: 24 (8 oz) servings

Ingredients

1/4 cup olive oil
1-1/2 qts sweet onion, diced
3 cups red bell pepper, diced
1 Tbsp garlic, chopped
1/3 cup chili powder
1 Tbsp paprika
1 Tbsp salt
1 Tbsp brown sugar
1-1/2 qts California ripe olives, halved, drained
1-1/2 qts lentils, cooked, drained and rinsed
1 (#10) can dark red kidney beans, drained and rinsed
1 qt tomato, chopped

Method

Heat olive oil in a large heavy pot. Add onion, bell pepper and garlic. Saute over medium heat for 10 minutes. Add chili powder, paprika, salt and brown sugar. Stir over medium heat for 1 minute.

Add olives, lentils, kidney beans and tomatoes. Cover and simmer over medium-low heat for 30 minutes. Stir occasionally. If desired, add tomato juice to increase liquid. Adjust seasoning as desired.
