Benedict Diablo

Benedict Diablo
Turn ordinary Eggs Benedict into a profitable entree. Perfect for brunch specials.

Ingredients

3 qts prepared Hollandaise sauce
1 qt prepared thick and chunky spicy salsa
1/4 cup fresh lime juice
1-1/2 gal Alaska Snow Crab meat*
3 Tbsp dry Mexican seasoning blend
48 each large poached eggs, kept warm
24 each cornmeal, cheese or buttermilk biscuits, split, 3-4 inches
3 cups cheddar or jalapeno-jack cheese, shredded
1/2 cup chopped cilantro or parsley

Method
Prepare Sauce in saucepan. Blend Hollandaise sauce, salsa and lime juice; keep warm. Blend crabmeat and Mexican seasoning. 
 
For each serving: Top 2 biscuit halves with 1 cup crabmeat. Add poached eggs. Ladle 2/3 cup sauce and sprinkle with 2 Tbsp shredded cheese and 1 tsp cilantro or parsley.
