Method
Bring first four ingredients and, if desired sausage to a boil in a saucepan. Reduce heat; simmer 30 minutes or until tender.
Prep: 10 min., Cook: 30 min.
Substitute 2-1/2 lb fresh black-eyed or pink-eyed peas, shelled (3 cups), if desired. Increase cooking time to 40 minutes or until tender.
