Blanco Pizzette

Blanco Pizzette
Top your pizza "toppings" list with the rich, buttery flavor of snow crab.

Serves: 50

Ingredients
2 cups garlic, crushed
6-1/4 cups olive oil
50 each prepared pizza shells, (6 to 8-inch)
2-1/4 cups fresh lemon juice
18 lbs, 12 oz Alaska Snow Crab meat, flaked or chunked
12-1/2 cups green onions, sliced
9 lbs, 6 oz roma tomatoes, thinly sliced
9 lbs, 6 oz shredded pizza cheese blend (such as mozzarella, parmesan, romano, reggiano, etc.)
3-1/4 cups chopped fresh basil or thyme

Method
Blend garlic and olive oil. For each serving, brush 2 Tbsp oil on a pizza crust. Bake pizza at 425 degrees F for 5 minutes; remove from oven.
 
For each crust: Sprinkle approximately 2 tsp lemon juice over 6 oz crab; toss to blend.  Spread crab over crust. Sprinkle on 1/4 cup (1/2 oz) sliced green onions, 3 oz thin sliced (about 10 to 12) roma tomato slices, 3/4 cup (3 oz) shredded cheeses, and 1 Tbsp chopped fresh herbs. Bake an additional 10 minutes or until cheese is melted and thoroughly heated through.
 
Yield: 50 (6 to 8 ") pizzas.
