Method
Sprinkle shredded potatoes with 1 tsp salt and stir in minced onion. Wrap tortillas in aluminum foil and bake at 350 degrees F for 8 minutes.
Combine potatoes, eggs, sausage, 1 tsp salt and pepper; mix well. Melt butter in a large skillet. Add egg mixture to skillet; cook over low heat, stirring gently, until eggs are done. Spoon egg mixture evenly into tortillas; fold tortillas in half. Spoon picante sauce over tortillas and sprinkle with cheese, if desired.
Yields: 16 servings.
