4 cups of assorted berries, blackberries, raspberries, blueberries1-1/2 cups granulated sugar8 Tbsp unsalted butter, melted1 cup all-purpose flour1/2 tsp baking powder1/2 tsp baking soda1/8 tsp salt1/2 tsp vanilla1 egg, beaten1 cup milk
Position a rack in the center of the oven and preheat to 350 degrees F. Lightly butter an 11 x 8-1/2-inch glass or ceramic baking dish.To make the filling, place the berries in a sauce pan with 1/2 cup of sugar. Slowly heat berries till sugar is dissolved and bring to boil. Remove and allow to cool.In a bowl sift dry ingredients twice. In another bowl beat the melted butter, vanilla, egg and milk. Carefully mix the two together without over mixing. Pour the fruit in the casserole and pour the batter over fruit. Using a spatula spread batter completely over fruit. Bake until a toothpick inserted in the center of the topping comes out clean, about 45 minutes. Cool slightly. Serve warm or cooled to room temperature with ice cream.
