Method
Heat sugar, milk, butter and salt in heavy medium saucepan over medium-high heat, stirring constantly until boiling. Continue cooking 2 minutes; remove from heat.
Stir in vanilla chips, mixing until well blended. Add oats, banana chips and nuts; mix well.
Drop rounded teaspoonfuls onto lightly buttered wax paper or into lined miniature muffin pans; top with multi-colored sprinkles, if desired. Let stand 1 hour or until firm. Store in covered containers in cool place or refrigerator. Freeze if not serving within 1 week.
Flavor Variations:
Peanut and Banana Chewies - Substitute a 10 ounce bag of peanut butter chips for vanilla chips.
Oatmeal Raisin Chewies - Omit banana chips. Add 3/4 cup golden raisins.
Fruit & Oatmeal Chewies - Omit banana chips. Add 3/4 cup chopped fruit flavored gummy candies.
Chocolate & Oatmeal Chewies - Omit banana chips. Add 3/4 cup miniature candy coated chocolate candies.
