Cafe Potato Chowder

Cafe Potato Chowder
For real potato lovers. This wholesome and flavorful soup will satisfy even the biggest appetites with its chunky goodness and rich, creamy broth.

Serves: 40

Ingredients
1/2 lbs bacon, 1" pieces
3 cups onions, chopped
3 cups leeks
2 cloves garlic, minced
1 gal water, brought to boil
5 lbs Lambs Supreme Time Savor Soup Cubes
2 Tbsp sea salt
1 cup parsley, fresh, chopped
1 cup celery tops & leaves, chopped
1 Tbsp basil, chopped fresh leaves
2 tsp white pepper, fine
1 tsp paprika
1 gal milk
1 cup flour

Method
Fry bacon until crisp, remove bacon, and reserve drippings. Sauté onions, leeks, and garlic in bacon drippings. Combine all of these ingredients in soup pot. Simmer 20 minutes.
 
Mix flour with part of milk and add to soup. Simmer until slightly thickened and add remaining milk. Heat through (but do not boil). Garnish servings with crisp bacon and parsley.
 
Yields: 40 servings (1 cup).
