Cajun Seafood Chowder

Cajun Seafood Chowder

Ingredients
3 Tbsp butter
3 Tbsp flour
1 qt heavy cream
2 tsp Signature® Cajun Seasoning
1/2 tsp Signature® Celery Salt
12 oz bay scallops
8 oz shrimp, peeled, deveined, cooked
4 oz mushrooms, fresh, sliced
1/4 cup sherry, dry
1/2 tsp Signature® Parsley Flakes

Method

Melt butter over medium-high heat in a small stockpot; add flour and whisk to combine. Cook for one minute, stirring constantly. Add cream and heat until thickened, stirring constantly to avoid scorching.

Add Signature® Cajun Seasoning, Signature® Celery Salt, scallops, shrimp and mushrooms. Simmer for 7-10 minutes to heat through and cook scallops.

Stir in sherry and garnish with Signature® Parsley Flakes.
