California Avocado Spread for Sandwiches

California Avocado Spread for Sandwiches

Serve as a filling in small sandwiches made with mini bagels, party rye bread or petite rolls. Add any of the following: sliced Roma tomato, red onion, sprouts or lettuce, and thin slices of turkey or ham.

Use as an appetizer to fill or spread on assorted fresh vegetables (red or green sweet bell pepper squares, mushroom caps, hollowed-out cherry tomatoes, thick cucumber slices, or Belgian endive leaves) and garnish as desired with fresh herbs.

Ingredients

1 California Avocado, seeded and peeled

2 tsp lemon juice

1 green onion, finely chopped

1 Tbsp chopped fresh dill

For flavor variations, substitute other fresh herbs, such as tarragon or basil for the dill.

Method

In a medium bowl, with a fork mash avocado with lemon juice. Stir in green onion and dill. Cover and chill briefly. Use this tasty and colorful avocado spread in place of mayonnaise in your favorite sandwich.

For each sandwich, spread about 2 Tbsp on slices of rye or whole wheat bread; add your choice of fillings such as sliced turkey, tomato and lettuce. Or serve as a spread on crackers, bagel crisps or small party breads.
