1-1/2 cups water1-1/2 cups chicken stock1 tsp salt1 lb asparagus2 Tbsp butter1 small onion3 cloves minced garlic1 cup uncooked long grain rice1/2 cup diced red bell pepper1/2 cup grated Parmesan cheese
Mix all ingredients, pour into 2 quart casserole and cover. Bake in oven at 400 degrees F for 20 minutes. Stir and then bake another 20 minutes.Recipe Courtesy of The California Asparagus Commission.
