Calypso Steak

Calypso Steak

Top sirloin grilled with a sweet and zesty jalapeño marinade.


Serves: 24

Ingredients

1/2 onion, medium, cut into quarters
4 oz ginger, peeled, cut thin
1/2 cup lime juice, fresh
1/2 cup soy sauce
1/2 cup vegetable oil
1/2 cup honey
6-8 jalapeño peppers, stems and seeds removed and cut in half
1 oz garlic, cloves
1 Tbsp allspice, ground
1 Tbsp dry mustard
1 Tbsp thyme leaves, dried
24 Beef Loin, Top Sirloin Butt Steak or Center cut steak, 1-1/2 lbs, cut 1-inch thick
Lime wedges and cilantro as needed

Method
Make Marinade
First 11 ingredients
Blend onion, ginger, jalapeño, garlic, mustard, spices and liquids in a blender or food processor until mixed. Place steak in a sealable plastic bag and pour marinade over steak. Seal well and refrigerate 20 minutes to 6 hours, turning bag occasionally. Remove meat from bag and discard marinade.
 
Grill steak to desired doneness turning once.
 
Plate steak and serve with a garnish of lime wedges and cilantro sprigs.
