Make Marinade
First 11 ingredients
Blend onion, ginger, jalapeño, garlic, mustard, spices and liquids in a blender or food processor until mixed. Place steak in a sealable plastic bag and pour marinade over steak. Seal well and refrigerate 20 minutes to 6 hours, turning bag occasionally. Remove meat from bag and discard marinade.
Grill steak to desired doneness turning once.
Plate steak and serve with a garnish of lime wedges and cilantro sprigs.
