Calzone Scones

Calzone Scones

Ingredients
2 cups flour (not whole wheat)
6 Tbsp margarine or oleo, chilled
1/2 cup Parmesan cheese
1/3 cup milk
2 tsp baking powder
1 egg
1/4 tsp
1/3 cup shredded mozzarella
1/4 tsp oregano
1/4 cup ricotta (or cottage cheese)
1/8 tsp plus generous pinch pepper
1/4 cup frozen spinach, thawed and well drained

Method
Preheat oven to 400 degrees F. Stir together flour, 1/4 cup Parmesan, and remaining dry ingredients. Cut margarine in until consistency is like coarse crumbs. Stir together milk and egg and add mixture into flour. Knead until combined. Don't overwork dough.
 
For filling, mix remaining cheeses, spinach, and the pepper in medium bowl. You can also add a grating of nutmeg or about 2 Tbsp tomato paste. Pat dough into 1/4" thickness on floured surface. Cut into rounds--make sure you cut an even number. Place half of the rounds on an ungreased cookie sheet. Top each round with about 1 Tbsp of filling. Brush edges with water and top with one of the remaining dough circles. Press edges to seal.  Bake 15-17 minutes or until lightly browned.
