Caribbean Lobster

Caribbean Lobster
Succulant lobster with a sweet coconut-pineapple butter sauce served with grilled vegetables.

Ingredients
1 each (6 oz) King & Prince Fancy Butterflied Lobster Tail
1 oz Pina Colada Butter Sauce
Grilled vegetables cut in 1-inch pieces (zucchini, red bell pepper, red onion wedge)

Method
Bake lobster at 400 degrees F for 22-25 minutes in conventional oven or for 13-15 minutes at 400 degrees F in convection oven.
 
Prepare Pina Colada Butter Sauce.  Place lobster on a serving plate.  Top with heated pina colada sauce.  Serve with grilled vegetables.
