Cavatappi Pasta with Vegetable and Meat Sauce

Ingredients

10 lbs Dakota Growers Cavatappi
3 lbs hot Italian sausage
3 red onions, chopped
2 lbs medium eggplant, diced into 1/2-inch size
2 cups calamata olives
2 qts Sugo or Marinara sauce
2 cups fresh grated Parmesan cheese
1/2 cup olive oil

Method

Prepare cavatappi pasta according to pasta directions. Drain and chill in ice bath. Set aside.

In large skillet, saute onion, sausage, eggplant, and olives in olive oil 5 minutes or until brown. Discard excess fat. Add Sugo sauce and simmer 10 minutes. Stir in pasta, cook 5 minutes over high heat. Top with Parmesan and fresh cracked pepper. Serve hot.
