Method
Prepare cavatappi pasta according to pasta directions. Drain and chill in ice bath. Set aside.
In large skillet, saute onion, sausage, eggplant, and olives in olive oil 5 minutes or until brown. Discard excess fat. Add Sugo sauce and simmer 10 minutes. Stir in pasta, cook 5 minutes over high heat. Top with Parmesan and fresh cracked pepper. Serve hot.
