Method
Lightly grease a quiche or 9" pie pan. Mix mushrooms, onion, rice and water in a 3 qt saucepan. Heat to boiling; reduce heat. Cover and simmer about 20 minutes, stirring occasionally until rice is tender.
Heat oven to 325 degrees F. Stir broccoli and cottage cheese into mushroom mixture. Stir in 3/4 cup cheddar cheese and the remaining ingredients. Spoon into prepared pan. Bake 40 minutes. Sprinkle with remaining 1/4 cup cheese. Bake 10 minutes longer, let stand 15 minutes.
Yields: 6 servings.
