Cheddar Apple Melt

Cheddar Apple Melt
Think a kid won't eat this one? Think again. And not only will they enjoy it, they'll meet the standard lunch requirement for the day.

Serves: 100

Ingredients
4 cups, 3 Tbsp margarine or butter, melted
3 Tbsp dried thyme leaves
1 Tbsp ground coriander, if desired
200 bread slices (French, sourdough, wheat, multi-grain)
200 (3/4 oz) cheddar or process cheese slices
3 gal, 2 cups Washington Golden Delicious or Granny Smith apples, cored and thinly sliced

Method
Blend margarine, thyme and coriander, if desired. Brush about 1 tsp margarine on one side of each bread slice. On unbuttered side of each of 100 slices, layer: Cheese slice, one-half cup apple slices, cheese slice, bread slice, spread side out.
 
Grill each sandwich over low heat until cheese melts and bread is golden. 
 
Contribution to School Lunch Requirement Per Serving: 1-1/2 oz meat alternate, 1/2 cup fruit, 2 bread servings.
