Cheesy Pasta Pie

Cheesy Pasta Pie

Serves: 6

Ingredients

6 oz spaghetti, cooked and drained
1 tsp olive oil
6 eggs, divided as 2 and 4, and beaten
1 (10 oz) pkg frozen spinach, chopped
1/2 cup green onion, thinly sliced
1/4 cup parsley, chopped
1 tsp basil
1 cup low-fat cottage cheese
1/2 cup whole milk or half & half
1/2 cup mozzarella cheese, shredded
1/2 cup Romano cheese, shredded
Salt and pepper, to taste
1/4 cup Parmesan cheese, grated

Method
Combine cooked spaghetti, 2 beaten eggs and olive oil and press into the bottom and up the sides of a 10-inch pie pan. Cover edge of pasta with greased foil to prevent burning. Bake 7-10 minutes in a 375 degree oveen, or until pasta is set. Cook spinach according to package directions and drain well. To the spinach, add green onions, parsley and basil. Combine cottage cheese, milk, 4 eggs, and mozzarella; stir in vegetable mixture and Parmesan cheese. Spoon into pasta shell and sprinkle Romano cheese over mixture. Bake at 375 degrees F for 30 minutes, or until set. Let stand 10 minutes before serving.
