Chickadee Potato
Cute name....BIG taste, easy to make. Great for late-night snacks or lunch entree.

Ingredients
1 baked potato
3 oz chicken breast, grilled and cut into 1/4" strips
1/4 cup salsa
1/4 cup cheddar cheese, shredded
1 Tbsp sour cream
Cilantro, chopped garnish

Method
 Bake the potato until cooked, approximately 1 hour at 400 degrees F. Internal temperature of 210 degrees F indicates doneness. Split open the top with a fork. Carefully pile on chicken breast, salsa, cheddar cheese, sour cream, salt, pepper and cilantro. Serve.
