Method
Arrange fresh broccoli and 2 Tbsp water in microwaveable dish. Cover with plastic wrap; vent. Microwave at high for 4 to 5 minutes or until broccoli is tender; rearrange once during cooking. Rinse in cold water. Pat dry with paper towels. If using frozen broccoli, thaw and pat dry with paper towels.
Rinse chicken with cold water and pat dry with paper towels. Place between two sheets of plastic wrap and pound to flatten. Unwrap chicken breasts and place on work surface. Spread 1 tsp mustard on each breast. Place one slice of ham on each breast. Place 2 broccoli spears on each breast. Roll up each breast; roll in bread crumbs to coat. Place chicken roll-ups along edges of 2-qt glass baking dish, seam side down. Spray each roll-up lightly with vegetable cooking spray. Cover with a paper towel.
Microwave roll-ups at high for 13 to 15 minutes or until done. Insert an instant-read thermometer into the thickest part of the chicken. Internal temperature should read 170 degrees F. Rotate each roll-up twice during cooking. Remove chicken to warm platter. Heat prepared cheese sauce and serve with chicken roll-ups.
