Chicken Stir-Fry Salad Sandwich with Oriental Slaw

Ingredients
1-1/2 cups Grey Poupon Peppercorn Mustard
1/4 cup rice wine vinegar
1/2 cup soy sauce, low sodium
1/4 cup sesame oil
54 oz chicken breast, boneless, 1/4" slice
1 oz peanut oil
Salt and pepper, as needed
9 oz bok choy, shredded
6 oz white cabbage, shredded
6 oz carrot, shredded
12 each sesame seed bun, sliced

Method
For salad dressing, combine the mustard, vinegar, soy sauce and sesame oil; set aside.
 
To make the chicken stir-fry salad, season chicken breast with salt and pepper and sauté in peanut oil; let cool and toss with 3/4 cup of dressing.
 
For the Oriental slaw, combine bok choy, cabbage, carrot and top with 1-1/2 cups of dressing.
 
To make the sandwich, place 5 oz of chicken salad on heel of the sesame bun; top with 2 oz of slaw and the crown of the bun.
 
Serving Suggestions: serve with sesame noodles topped with peanut sauce. Average food cost per serving: $1.50.
