Chocolate Chip Peanut Cake

Chocolate Chip Peanut Cake
Rich, moist chocolate cake covered in a crunchy peanut topping. Serve with a dollup of whipped cream.

Serves: 64, 3x2-inch servings

Ingredients

5 lb (full box) Krusteaz Devil's Food Cake Mix
36 oz (4 cups) peanut butter
16 oz (2 cups) packed brown sugar
32 fl oz (4 cups) water
24 oz (12) eggs
8 fl oz (1 cup) vegetable oil
24 oz (4 cups) chocolate chips, divided
16 oz (4 cups) chopped peanuts

Method

Place Krusteaz Devil's Food Cake Mix, peanut butter and brown sugar in mixer bowl. Using a paddle, mix on low speed until crumbly. Set aside 2 cups mixture. Add water, eggs and oil to remaining crumb mixture. Mix on low speed 30 seconds or until moistened. Change to medium speed and mix 2 minutes.

Stir in 12 oz (2 cups) chocolate chips. Scale batter into prepared 24x16x1-inch pan.

 

Combine peanuts, reserved crumb mixture and 12 oz (2 cups) chocolate chips. Sprinkle evenly over batter.

 

For standard oven, bake at 350° F 40-45 minutes; for convection oven, bake at 300° F  40-45 minutes or until toothpick inserted into center comes out clean.
