Method
Stir cheese to break up; reserve.
Heat rice and next 2 ingredients. Meanwhile, melt chocolate and butter together; stir into rice along with cinnamon and salt. Cook over medium heat, stirring frequently, until mixture thickens, about 20 minutes. Remove from heat; stir in reserved cheese and vanilla. Put 3/4 cup each in 12 ramekins; chill.
Top each ramekin with a dollop of whipped cream; sprinkle each with a few chocolate shavings and a mint strip.
