Chocolate-Rice Pudding with Requeson

Ingredients
1 lb, 8 oz California Requeson Cheese
7 cups long grain rice, cooked
1-1/2 qts milk
1-1/3 cups sugar
1 oz unsweetened chocolate
1/4 cup butter
1/8 tsp cinnamon, ground
1/8 tsp salt
2 tsp vanilla
Whipped cream, as needed for garnish
Semi-sweet chocolate shavings,  as needed for garnish
Fresh mint cut in thin strips, as needed for garnish

Method
Stir cheese to break up; reserve.
 
Heat rice and next 2 ingredients. Meanwhile, melt chocolate and butter together; stir into rice along with cinnamon and salt. Cook over medium heat, stirring frequently, until mixture thickens, about 20 minutes. Remove from heat; stir in reserved cheese and vanilla. Put 3/4 cup each in 12 ramekins; chill.
 
Top each ramekin with a dollop of whipped cream; sprinkle each with a few chocolate shavings and a mint strip.
