Hanukkah is a time of togetherness. And what better way to celebrate than with a special family dinner, based on tradition and touched with imagination. Serve Chopped Chicken Liver as an appetizer before traditional Hanukkah meal (Party Pot Roast, potato latkes, pink applesauce, or rugelach).
Remove any fat from the livers. Sauté livers and onion slices in 4 Tbsp chicken fat until liver is almost cooked through but still pink in the center. Transfer to a chopping bowl or food processor. Add eggs, seasonings and remaining chicken fat. Chop or swirl together to make a paste. Serve with crackers or slices of egg bread.
NOTE: Mounded high and sprinkled with chopped parsley, chopped chicken liver makes a marvelous party spread. You can prepare it 2 to 3 days in advance if you keep it tightly covered and refrigerated. It can also be used as an alternative to liver pate in a Beef Wellington.
