Classic Fried Catfish
This Louisiana staple is a snap to make. For an authentic presentation, serve with red beans and rice and jalapeno hushpuppies.

Method
Combine cornmeal, flour, salt, cayenne pepper and garlic powder. Coat farm-raised catfish with mixture, shaking off excess. Deep fry at 350 degrees F until golden brown, about 5 - 6 minutes, depending on size. Remove and drain on paper towels.
