Coconut Almond Chews

Coconut Almond Chews
White cake mix baked with flaked coconut and whole almonds for a distinctive flavor and chewy texture.

Serves: 9 dozen cookies

Ingredients

5 lb (full box) Krusteaz White Cake Mix
28 oz (10-2/3 cups) flaked coconut
12 oz (1-1/2 cups) butter or margarine, softened
16 oz (8) eggs
5 oz (1 cup) whole almonds

Method

Place Krusteaz White Cake Mix, coconut, butter or margarine, and eggs in mixer bowl. Using a paddle, mix on low speed 1-1/2 minutes. Scrape bowl. Continue to mix on low speed 1 minute.

Using #40 scoop, drop dough onto prepared baking sheet. Press 1 almond in the center of each cookie.

 

For standard oven, bake at 350° F 10-12 minutes; for convection oven, bake at 300° F 8-10 minutes or until edges are slightly browned.
