Cornmeal Crisp Alaska Cod
This is a wonderful menu item for Lent and Easter specials because of its flexibility. It functions well in family dining, casual and full service operations on lunch, dinner, and late night menus.

Ingredients
8 large eggs
1 cup water
3 cups yellow cornmeal
1 tsp lemon peper
9 lbs cod fillets (24 pieces, 6 oz each), thawed if necessary
1 cup butter

Method
Whisk together eggs and water in shallow dish. Combine cornmeal and pepper in another shallow dish.
 
For each serving: dip one cod fillet in egg mixture and then in cornmeal mixture to coat completely. Melt 2 tsp butter in skillet over medium heat; add fillet. Cook for approximately 3 minutes until cornmeal is golden and fish is just cooked through, turning once.
 
Place on serving plate with 2-1/2 Tbsp Tarter Sauce.
