Country Skillet
Corned beef, potato cubes, eggs, onions, peppers and more, are prepared and served in a sizzling skillet for a taste and presentation that will have them asking for more.

Ingredients
10 oz Lamb Weston Private Reserve Breakfast Cubes
4 oz corned beef, cooked, diced
2 oz onions, chopped
2 oz green peppers, diced
2 large eggs, beaten
1 oz cheddar cheese, shredded

Method
Cook breakfast cubes, corned beef, onions and green peppers on hot oiled grill for 4-5 minutes on one side, then turn. Cook 3-4 minutes on other side until lightly browned. Or, deep fry potatoes (350-360 degrees) for 2-1/2 minutes or until golden brown and crispy. Push potato mixture to one side and cook eggs on grill. In serving skillet, arrange potato mixture and top with scrambled eggs. Sprinkle with cheese.
 
Yields: one serving.
