Couscous Salad with Spinach & Mandarin Oranges

Ingredients
1-1/4 cups water
1-1/4 tsp mint leaves
1/2 tsp salt
1 cup uncooked couscous
1/2 cup firmly packed chopped spinach
1/4 cup diced celery
1/4 cup diced red onion
(1) 11 oz mandarin oranges, drained, juice reserved
1/4 cup fat-free honey mustard dressing
1/4 tsp pepper
4 Signature eggs hard cooked, quartered, lengthwise

Method
Bring water, mint leaves, and salt to a boil in a medium saucepan; stir in couscous. Remove from heat; let stand covered, 5 minutes. Fluff with a fork. Stir in next four ingredients.
 
In separate bowl, combine 1/4 cup reserved mandarin orange juice, honey mustard dressing, and pepper; stir with a wire whisk until blended. Add to couscous mixture. Toss well. Add sliced eggs and lightly toss to coat. Serve over bed of spinach or assorted greens.
