Method
Bring water, mint leaves, and salt to a boil in a medium saucepan; stir in couscous. Remove from heat; let stand covered, 5 minutes. Fluff with a fork. Stir in next four ingredients.
In separate bowl, combine 1/4 cup reserved mandarin orange juice, honey mustard dressing, and pepper; stir with a wire whisk until blended. Add to couscous mixture. Toss well. Add sliced eggs and lightly toss to coat. Serve over bed of spinach or assorted greens.
