Crab Caesar Salad

Crab Caesar Salad
Add a taste of the sea to your Ceasar salads with crab meat! Imparts a rich, delicate flavor to this popular dish.

Serves: 24

Ingredients
48 slices portabella mushrooms, sliced
1-1/2 cups balsamic vinegar
1 cup olive oil
12 to 14 lbs romaine lettuce leaves, torn
12 oz parmesan cheese, shredded
3 cups prepared caesar salad dressing
3 qt croutons
6 lbs, 8 oz Alaska King Crab meat, shredded

Method
Blend vinegar and oil. Brush on mushroom slices. Prepare salad. Toss lettuce with parmesan cheese and dressing.
 
For each serving: portion 3 cups dressed lettuce on salad plate. Top with 2 oz (about 2 slices) mushrooms, 1/2 cup (3/4 oz) croutons and 3/4 cup (3 oz) King Crab meat.
 
Yield: 24 (3-cup) servings.
