Method
Blend vinegar and oil. Brush on mushroom slices. Prepare salad. Toss lettuce with parmesan cheese and dressing.
For each serving: portion 3 cups dressed lettuce on salad plate. Top with 2 oz (about 2 slices) mushrooms, 1/2 cup (3/4 oz) croutons and 3/4 cup (3 oz) King Crab meat.
Yield: 24 (3-cup) servings.
