Crab and Corn Chowder

Crab and Corn Chowder

Serves: 4

Ingredients
2 Tbsp vegetable oil
1 onion, chopped
4 Tbsp butter
1/4 cup flour
3 cups fish stock
1 cup milk
2 potatoes, diced
2 cups corn kernels
1/2 tsp thyme, dried
Tabasco sauce, to taste
1 lb crab meat
1 cup 35% cream

Method
Sauté the onion in hot oil until softened. Make roux with the butter and flour; add the liquids and cook a few minutes. Add the potatoes, corn, seasonings and onion, and cook until tender. Add luxury crab meat and cream. Heat through.
 
Yields: 4 servings.
