Crab-Egg Casserole

Crab-Egg Casserole

Serves: 12

Ingredients
9 slices white bread, crust removed
3/4 cup green pepper, chopped
9 oz crab meat, drained & flaked
6 oz mushrooms, drained & sliced
3 oz pimiento, diced
10 eggs, hardcooked, thinly sliced
2 cups half & half
3/4 cup celery, chopped
2-1/4 cups mayonnaise
1/2 cup onion, chopped
4 Tbsp dry sherry
3/4 cup breadcrumbs, soft
3 Tbsp butter, melted

Method
Cut bread into small cubes; set aside. Combine mayonnaise and half & half in a large bowl, stir well. Fold all but breadcrumbs and melted butter into mayonnaise mixture. Spoon crab mixture into a lightly greased half pan. Cover and refrigerate overnight.
 
Combine breadcrumbs and butter, stirring well. Sprinkle over top of casserole. Bake at 325 degrees F for 1 hour or until bubbly.
 
Yields: 12 servings.
